Preparation Method :

  • Pop the beans out of their skins, put them into a pan, and pour in water to cover.
  • Bring to a boil, then reduce the heat, and simmer for about 1 hour, or until very tender.
  • Drain and process to a puree in a food processor. Scrape the puree into a bowl, add the fresh bread crumbs, parsley, yogurt, mustard, lemon juice, scallions, and egg whites, and knead until thoroughly mixed.
  • Form the mixture into 18 balls, coat them in the dry bread crumbs, and flatten lightly with your hands. Heat the oil in a nonstick, heavy skillet or frying pan.
  • Add the patties, in batches if necessary, and cook over medium heat for 3 minutes on each side, until golden brown. Drain on paper towels.
  • Serve hot accompanied by Garlic yogurt or Tzatziki.


  • 400 gram dried giant white beans or lima (butter) beans, soaked for 24 hours in cold water to cover and drained
  • 200 gram fresh bread crumbs
  • 25 gram  finely chopped fresh parsley
  • 120 ml plain yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 40  grams  finely chopped scallions (spring onions)
  • 2 egg whites, lightly beaten
  • 40 grams fine dried bread crumbs
  • IDHAYAM sesame oil, for frying
  • Garlic yogurt or Tzatziki ,to serve
