MOUSSAKA

Show off your talents in cooking through preparing moussaka! This microwave recipe can be easily prepared within 35 minutes because its cooking procedures are totally fast and simple. You can serve this regularly at home or even to special occasions as well.

Preparation Method :

  • Transfer the sliced aubergines to a large bowl and add the water, salt and lemon juice.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook on Full for 10 minutes.
  • Remove from the microwave and allow to stand for 15 minutes then drain thoroughly.
  • To make the meat layer, put the butter, margarine or oil into a deep 9 cup dish. Heat, uncovered, on Full for 1 minute. Stir in the onions and garlic.
  • Cook, uncovered, on Full for 4 minutes. Add the meat and breadcrumbs and stir in gently with a fork. Season to taste. Grease a deep dish with little oil.
  • Fill with alternate layers aubergine slices and the meat mixture. Cover with the tomato slices.
  • To make the sauce, warm the milk and butter or margarine in a jug on Full for 5minutes.
  • Add the flour into a medium bowl and gradually stir in the warm milk and butter mixture.
  • Cook, uncovered, on Full for 5 minutes until thickened and bubbling, whisking every minute to ensure smoothness.
  • Mix in the cheese with egg yolk and season to taste. Spoon over the tomatoes. Cover with cling film and slit it to allow steam escape.
  • Cook on Full for 12 - 14 minutes turning the dish 3 times.
  • Allow to stand for 5 minutes before serving.

INGREDIENTS

  • 300 grams cold cooked lamb mince
  • 750 grams aubergines,wash and dry the aubergines, top and tail, then slice thinly.
  • 5 tablespoon hot water
  • 1 tablespoon fresh lemon juice
  • 50 grams Cooking oil
  • 2 onions, finely chopped
  • 1 garlic clove, crushed
  • 100 grams fresh white breadcrumbs
  • 4 tomatoes, blanched, skinned and sliced
  • 400 ml full-cream milk
  • 3 tablespoon butter or margarine
  • 3 tablespoon all-purpose flour
  • 75 grams Cheddar cheese, grated
  • 1 egg yolk
  • Salt and freshly ground black pepper
