Preparation Method :

  • Blanch the asparagus in a large pan of boiling water for 5-8 minutes, until tender, then drain carefully, and let cool.
  • Put all the ingredients for the dressing in a screw-top jar, season with salt and pepper, fasten the lid, and shake vigorously.
  • Pour the dressing over the cooked asparagus and let marinate for at least 2 hours before serving.


  • 1 kg asparagus, trimmed 

For the Dressing

  • 4 tablespoons Cooking oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon or other mild mustard
  • 1 garlic clove, finely chopped
  • ¼ teaspoon sugar
  • Salt and pepper
