Greek Fasolatha bean soup, which is not only tasty and filling, but also healthy. A significant part of the Mediterranean diet.

Preparation Method :

  • Place the beans in a pot and soak them in water over night.
  • Strain the water and add new water to the pot.
  • Bring to a boil and strain the water again.
  • Cover the beans with water and add onion carrots, celery, tomato paste or diced tomatoes, olive oil, sugar, vegetable bouillon cube, salt and pepper.
  • Cover the pot and cook for about 50-60 minutes until the beans are soft.
  • For an herbal alternative to warm up the taste buds add sage, thyme, garlic, or ground cloves.
  • This is a foolproof recipe easy and fast to make and all the ingredients already on hand in your cupboard.


  • 500 grams white kidney beans
  • 1 onion chopped
  • 3 carrots sliced
  • 1 stalk celery, chopped
  • 3 teaspoon tomato paste or 1 cup of canned diced tomatoes
  • 200 ml Cooking oil
  • 600 ml water
  • 1 teaspoon sugar
  • 1 vegetable bouillon cube
  • Salt and pepper to taste
