GREEK VEGETABLE SOUP

Yogurt, mixed vegetables, lemon and mint leaves are the main ingredients of Greek vegetable soup. Preparing this dish is extremely fast and easy. You also don’t need to spend a lot of money just to prepare its distinct ingredients and other special seasonings.

20 minutes

Preparation Method :

  • Put the stock in a pan and bring to the boil. Add vegetables, then lower the heat, cover and simmer for 10 minutes or until just tender.
  • Meanwhile, put the egg yolk in a bowl and whisk in the yogurt. Stir in the liquid and mix well.
  • Add to the soup in the pan, stirring constantly, heat through gently without boiling. Season salt and pepper to taste.
  • Pour into 4 individual serving bowls, garnish with chopped mint and lemon rind and serve hot.
  • Garnished a swirl of cream and a sprinkling of parsley. 

INGREDIENTS

  • 750 ml beef stock 
  • 200 grams mixed vegetables, peeled and chopped 
  • 2 egg yolk 
  • 500 ml plain low-fat yogurt 
  • Salt
  • Freshly ground black pepper
  • 2 tablespoon chopped mint leaves
  • Finely grated rind of 1 lemon
