An easy and quick Classic meze of fried eggplants taken right out of my mother’s personal cook book!
Serves :

Preparation Time :
40 minutes

Cooking Time :
15 minutes

Preparation Method :

  • In a bowl put the strips and sprinkle with salt and keep it aside for 30 minutes.
  • In another bowl prepare the batter by mixing thoroughly the flour, water, egg, and pepper.
  • Heat the olive oil in a frying pan.
  • Coat the eggplant in the batter and let fry for 4-5 six minutes until golden brown on both sides.
  • Use absorbent paper to drain off excessive oil and serve then on a beautiful platter.
  • Serve the Eggplants hot with Feta cheese or Tzatziki. Enjoy!


  • 1 kg eggplants, unpeeled cut into round strips
  • 200 grams flour
  • 200 ml water
  • 1 egg
  • Salt and pepper to taste
  • Cooking oil for frying
