Preparation Method :

  • Marinate the mutton: Wash the mutton and drain it of all water.
  • Mix the meat with all the ingredients and salt. Marinate for about 20-30 minutes.
  • Prepare the rice: Wash and soak the rice in water for about 20 minutes, then drain the water.
  • Boil 2½ litres of water with a little salt. Once the water starts to boil, add the rice and cook for about 5 minutes or until it is half done.
  • Drain the water and transfer the rice to a wide pan.
  • Cook the mutton: Heat the oil and fry the onions till golden brown. Add the marinated meat and keep stirring till it comes to a boil.
  • Add a little water and cook for 25 minutes till the meat is tender. When done, the meat should have 2 cups of gravy left.
  • Assemble and serve: Take a heavy bottomed pan and smear it with oil. Place two thirds of the rice in it, followed by the cooked meat with the gravy. Cover this with the balance rice.
  • Sprinkle saffron dissolved in screwpine water and milk, ghee, and cream.
  • Cover with a tight fitting lid and cook first on high flame at least for 2 minutes and then on low flame for about 15 minutes or until the rice is done and steaming. Serve hot.


  • 1 kg mutton, cut into medium sized pieces  
  • 350 grams yoghurt, whisked 
  • 3 tablespoon ginger paste 
  • 2 tablespoon garlic paste 
  • 2 teaspoon red chilli powder

Ground to paste

  • 10 almonds, blanched and skin peeled
  • 2 tablespoon watermelon and musk melon seeds Powdered 
  • 1 teaspoon caraway seeds 
  • 1 teaspoon peppercorns
  • A few mace flakes 
  • A small piece of nutmeg
  • 2 inch cinnamon stick
  • 4 green cardamoms
  • 500 grams long grain rice 
  • 2 medium onions, ground
  • ½ teaspoon saffron
  • 2 tablespoon screwpine water
  • 100 ml warm milk
  • 1 tablespoon ghee
  • 3 tablespoon thick cream
  • 90 ml Cooking oil
  • Salt
