Preparation Method :

  • In a mixing bowl, combine the diced green mangoes with sugar, crushed cinnamon and crushed cloves. Mix well, cover and set aside for an hour.
  • Meanwhile, combine the vinegar with ginger and garlic in a blender and blend to a fine paste.
  • In a pan, combine the sugared mango with the ginger-garlic mixture, salt and chilli powder. Place on a low heat and cook, stirring continuously, till the sugar dissolves, the syrup turns glossy and green mangoes soften.
  • Cool to room temperature. Transfer to an airtight container and store refrigerated.


  • 5 medium-sized half-ripe green mangoes, peeled and diced
  • 150 grams sugar     
  • 2-inch stick cinnamon, crushed
  • 8 cloves, crushed
  • 200 ml vinegar
  • 2-inch piece ginger, finely chopped
  • 15 cloves garlic, finely chopped
  • Salt to taste
  • 5 teaspoons red chilli powder
