Preparation Method :

  • Place the semolina and sugar in a heavy-based pan and gradually stir in the milk until smooth.
  • Add the butter in small pieces. Bring to the boil for 2-3 minutes or until thickened, stirring occasionally to prevent sticking.
  • Add the cardamoms and continue cooking for another 8-10 minutes or until the mixture leaves the side of the pan.
  • Spread the mixture on a greased plate or in a shallow dish to a thickness of 1 inch. Leave until almost cold, then decorate with the almonds.
  • Serve cold, cut into slices or squares.


  • 75 grams fine semolina
  • 150 grams granulated sugar
  • 500 ml milk
  • 50 grams butter
  • 10 cardamom pods, peeled and crushed
  • 100 grams blanched almonds, halved and toasted
