Preparation Method :

  • Place the carrots, milk, nuts, raisins, cinnamon and cardamom in a large heavy-based saucepan. Cook for about 25-30 minutes stirring frequently.
  • Add the cream and continue stirring over a low heat. Reduce the carrot mixture until there is no moisture present.
  • Stir in the ghee and combine well for about 8-10 minutes. Add the sugar and stir for a further 5 minutes. Remove from the heat and drizzle with saffron milk.
  • Serve hot in individual bowls topped with chopped pistachios and fresh creme fraiche.


  • 1 kg carrots, grated
  • 220 ml single cream
  • 100 grams ghee
  • 50 grams granulated sugar
  • 1 litre whole milk
  • 1 tablespoon flaked almonds
  • 4 teaspoon ground almonds
  • 2 teaspoon raisins
  • ½ teaspoon ground cinnamon
  • 1 teaspoon saffron threads, soaked in 3 tablespoons warm milk
  • 3-4 cardamom pods, finely crushed
  • 2 tablespoon unsalted pistachios, finely chopped
  • Creme fraiche
