Preparation Method :

  • Sift the self-raising flour, the rice flour and the salt together into a bowl. Add enough of the water to make a smooth, coating batter. Mix well, then stir in the lime rind.
  • Peel the bananas and dip them into the batter two or three times. Heat the oil, Deep-fry the battered bananas in the hot oil until crisp and golden.
  • Drain and serve hot, dredged with sugar. Offer the lime wedges to squeeze over the bananas.


  • 150 grams self-raising (self-rising) flour
  • 50 grams rice flour
  • ½ teaspoon salt
  • 250 ml water
  • Finely grated lime rind
  • 9 small bananas
  • Cooking oil for deep-frying
  • Castor (superfine) sugar and 1 lime cut in wedges, to serve
