Preparation Method :

  • Place the milk and cardamoms in a large heavy pan. Bring to the boil then simmer vigorously until reduced by one-third.
  • Strain the milk into a bowl, discard the cardamoms, and then stir in the sugar and almonds until the sugar is dissolved.
  • Pour the mixture into a freezer proof container, cover and freeze until almost firm, stir every 20 -30 minutes.
  • When almost solid, pack the ice cream into yogurt pots. Return to the freezer until required.
  • Remove the pots about 10 minutes before serving and turning the individual ices out.
  • Decorate with toasted almonds and cardamoms before serving.


  • 2 liters creamy milk
  • 12 cardamoms
  • 150 grams castor (superfine) sugar
  • 25 grams blanched almonds, chopped
  • Toasted flaked almonds and cardamoms, to decorate
