Preparation Method :

  • The Syrup: Heat a saucepan over a medium heat. Add the sugar to 2 cups of water and bring to the boil, stirring continuously, until it becomes just sticky.
  • Remove the pan from the heat, stir in the saffron and rose water, set aside.
  • If the dough is too dry add a little more milk and knead well. Shape the dough into golf balls, make sure that each ball is smooth with no cracks.
  • Heat the ghee or unsalted butter in a large frying pan over a medium heat.
  • Simmer to low flame then add the dumplings. Fry the dumplings until golden brown, remove with a slotted spoon.
  • Put straight into the warm rose syrup. Serve warm with a little syrup or with Mango Ice Cream.


The Dumplings - Mix to soft dough, rest for half an hour

  • 90 grams full-cream milk powder
  • 2 tablespoons ghee or unsalted butter
  • 2 tablespoon plain flour
  • 25 grams ground semolina
  • ΒΌ teaspoon baking powder
  • 50 ml milk, to bind

The Rose Syrup

  • 250 grams sugar
  • Few saffron threads
  • Few drops of rose water
  • 4 cardamon pods, crushed, pods discarded and seeds ground
