Preparation Method :

  • Simmer for an hour, stirring frequently, as well as scraping thickened milk from the bottom and sides of the pan to reduce the liquid.
  • Add the sugar, almonds and crushed cardamoms. Stir regularly for a further 20-30 minutes or until the rice softens and the milk thickens.
  • Pour into individual dishes and garnish with flaked almonds and drizzle with saffron milk. Serve hot or cold.


  • 100 grams risotto rice, washed, soaked, drained and crushed
  • 1 litres whole milk
  • 50 grams granulated sugar
  • 3 tablespoon flaked almonds
  • 12 pieces of flaked almonds
  • Few saffron threads, soaked in 3 tablespoons warm milk
  • 6 cardamom pods, finely crushed
