Preparation Method :

  • Cook the pancakes as in recipe. Make the filling by blending the cheese, egg yolk and vanilla together.
  • Fill the pancakes with the cheese mixture, tuck in the ends and roll up. Chill until required.
  • Heat the butter and oil in a heavy-based frying pan (skillet) and add the blintzes, seam-side down.
  • Fry until golden brown, then turn carefully and fry the other side.
  • Serve at once, with a bowl of sugar and cinnamon mixed together and a jug of sour cream.


  • 8 small pancakes, about 6 inches in diameter 
  • 30 gram butter
  • 1 tablespoon Cooking oil


  • 400 gram cottage cheese, drained 
  • 2 egg yolk
  • 1 teaspoon vanilla essence
