Preparation Method :

  • Put all the ingredients in the top of a double saucepan or in a bowl standing over a pan of simmering water.
  • Heat gently, stirring, for about 20 minutes, until the sugar has dissolved and the mixture is thick enough to coat the back of a spoon.
  • Strain, pot and cover the curd.


  • Grated rind and juice of 2 large oranges
  • Juice of 2 lemon
  • 250 grams castor sugar
  • 100 grams butter
  • 3 egg yolks, beaten
