HONEYED CHICKEN WINGS

Preparation Method :

To make the marinade, mix together all the ingredients in a bowl, mixing thoroughly until tombined.
Put the chicken wings into a shallow bowl and pour over the marinade.
Spread the marinade all over them, then cover and leave in a cool place for 2 hours.
Meanwhile, make the sauce. Heat the oil in a small saucepan and fry the onion for about 5 minutes until golden brown.
Stir in the sugar, lime juice and peanut butter, and then add the creamed coconut, a little at a time.
Add the salt and cook over a gentle heat until smooth and thick. Set aside.
Remove the chicken wings from the marinade and place them on a rack in a baking tray.
Cook in a preheated oven for 15-20 minutes, until golden brown and cooked through, basting from time to time with any remaining marinade.
Alternatively, grill for 5-7 minutes on each side.
Serve with the warm dipping sauce.

20 chicken wings, trimmed

Marinade

5 tablespoons soy sauce
8 tablespoons clear honey
4 tablespoons vinegar
2 tablespoon sherry
4 teaspoons soft brown sugar
1 teaspoon ground ginger
3 garlic clove, crushed

Dipping Sauce

4 tablespoons IDHAYAM sesame oil
4 tablespoons grated onion
4 tablespoons brown sugar
2 teaspoon lime juice
4 tablespoons peanut butter
10 tablespoons creamed coconut
Pinch of salt
