Preparation Method :

  • Prepare the green chutney by grinding all the ingredients (except lemon juice) in a mixer. Transfer it to a bowl and then add the lemon juice. Mix it well.
  • Make tamarind chutney by boiling water and jaggery. Once the jaggery gets completly dissolved, add the tamarind pulp.
  • Then add in the remaining ingredients like black salt, chilli powder, salt and cumin seed powder.
  • Simmer for 5-7 minutes until the mixture thickens and turn off the gas. Cool it. (It can be stored in refrigerator).
  • Mash the boiled potatoes and add chopped green chilli, coriander leaves, garam masala and salt. Mix all the ingredients.
  • Whisk the curd in a bowl.
  • Arrange papdis on a serving plate. Spread a teaspoon of potato mixture on each papdi. Cover all the papdi with curd. Add green chutney followed by tamarind chutney. Sprinkle chopped onion on top of it. Add black salt, chilli powder and cumin powder.
  • Garnish with coriander and sev.
  • Serve it immediately.


Papdi chaat

  • 12 flat crisp papdis / mathris
  • 100 grams curd
  • 1 potato (boiled)
  • 1 onion finely chopped
  • 2 teaspoon cumin powder
  • 1 green chilli (chopped)
  • 1 teaspoon coriander leaves
  • 1 teaspoon red chili powder
  • 1 teaspoon black salt
  • ½ teaspoon garam masala
  • 3 tablespoon sev
  • Salt as per taste
  • coriander leaves for garnishing

Green chutney

  • 3 tablespoon mint leaves
  • 3 tablespoon coriander leaves
  • 1 small piece of ginger
  • 1 green chilli
  • 1 teaspoon cumin seeds
  • 1 teaspoon lemon juice
  • Salt as per taste

Tamarind chutney

  • 3 tablespoon tamarind pulp
  • 75 grams jaggery
  • 250 ml water
  • 1 teaspoon cumin seeds powder
  • 1 teaspoon black salt
  • Salt as per taste
  • Chilli powder as per taste
