Preparation Method :

  • The Batter: Sift the flour into a bowl with the bicarbonate of soda, salt and the toasted ground cumin.
  • Add some black pepper, the ground spices, fresh coriander, garlic and lemon juice.
  • Slowly add in half a cup of water and stir it well to form a smooth and thick batter to coat the vegetables.
  • Heat the oil in a saucepan. Dip a few vegetables into the batter and then place them slowly into the oil. Turn the vegetables over a few times so that they are evenly browned.
  • Remove with a slotted spoon and drain on kitchen paper. Fry the rest of the vegetables in batches.
  • Serve hot with Spicy Tomato Dip.


The Batter

  • 150 grams gram flour
  • ½ teaspoon bicarbonate of soda
  • 2 tablespoons finely chopped fresh coriander
  • ½ teaspoon cumin seeds, dry roasted and pounded
  • 3 garlic cloves, finely crushed
  • 2 teaspoon lemon juice
  • Salt and freshly ground black pepper, to taste

The Filling

  • 3 potatoes cut into thin slices
  • 2 cauliflower or broccoli florets, thinly sliced
  • 1 onion, sliced into rings
  • 20 green beans, trimmed and cut in half
  • 1 small green pepper, deseeded and sliced into rings

Ground Spices

  • 1 teaspoon chilli powder
  • 1 teaspoon coriander powder
  • ½ teaspoon ginger
  • ½ teaspoon turmeric powder
