FISH COOKED IN LAYERS OF VEGETABLES

Preparation Method :

  • Pre heat the oven to 180°C / 350°F / Gas mark 4.
  • Sprinkle some of the vegetables at the base of an oven-proof dish and arrange the fish on top of them.
  • Drizzle on the spicy vinegar dressing and cover with the rest of the vegetables.
  • Empty the dressing over it and cover the dish with a tight fitting lid.
  • Bake it in a pre-heated oven for 15-20 minutes or until the fish and the vegetables to cook through. Serve hot.

INGREDIENTS

  • 750 grams Mackerels, cleaned, gutted, washed, cut into medium sized chunks and rub with salt and turmeric powder.
  • 1½ teaspoon turmeric powder

Mixed together

  • 150 grams Potatoes, peeled and sliced  
  • 125 grams Spring onions, finely chopped
  • 150 grams onions, peeled and sliced
  • 120 grams Tomatoes, sliced

Spicy Vinegar Dressing: Whisked in a Bowl

  • 50 ml Malt vinegar
  • 2 tablespoon Cooking oil
  • 25 grams Chopped garlic
  • 20 grams Shredded ginger
  • 1 tablespoon Black pepper powder
  • 2 tablespoon Chopped fresh chillies
  • 2 tablespoon Water
  • Salt to taste
