Preparation Method :

  • Fill the squid with the shrimp mixture and close the mouth with a toothpick to prevent spilling out while cooking.
  • Heat the olive oil in a pan and saute bay leaf, onion and garlic until soft and translucent.
  • Add tomatoes, tomato puree, lime juice, salt and pepper. Bring it to a boil.
  • Place the stuffed squids and cook it on a slow heat for about 10 - 12 minutes, stirring gently with the sauce.
  • Filling : Heat the olive oil in a sauce pan and sauté onion and garlic until soft and translucent.
  • Add minced shrimps and white wine, lime juice, Tabasco sauce, salt and pepper.
  • Cook till tender. Remove from the heat and leave to cool.

INGREDIENTS

  • 1 tablespoon Garlic, Finely chopped
  • 500 grams Small squids, cleaned and rinsed
  • 3 tablespoon extra virgin olive oil
  • 1 no Bay leaf    
  • 2 tablespoons Onion, Finely chopped
  • 100 ml Tomato puree
  • 100 grams Seedless tomatoes, Finely chopped
  • 1 no Lime
  • Salt and pepper to taste

For Filling

  • 250 grams Cleaned, rinsed, Minced shrimp
  • 2 tablespoons Onion, Finely chopped
  • 1 no Lime
  • Few drops Tabasco sauce
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Garlic, Finely chopped  
  • 2 tablespoon White wine
  • Salt and pepper to taste

Garnish

  • 1 tablespoon Parsley, finely chopped
