POMFRET DEMBRE

Preparation Method :

  • Marinate the fish inside and out with the salt, turmeric and half the chilli paste. Keep in a cool place for about an hour.
  • Heat half the oil in a pan and stir in the onions. When the onions are soft, add in the chopped garlic. Cook till the garlic is soft.
  • Add in the tomatoes and red chilli paste. When the tomatoes are mushy, add in the coriander seeds, and the coriander leaves.
  • Adjust seasoning with salt and chilli. Remove from the heat and stuff the fish with this filling.
  • In a non-stick pan heat up the oil and fry the fish till golden and crisp. Drizzle with the lemon juice and serve hot.

INGREDIENTS

  • 500 grams Pomfret, cleaned, slits on either side, snap the bone and pull completely 
  • 100 ml Cooking oil
  • 60 grams Chopped onions
  • 4 tablespoon Red chilli paste
  • Juice of one lemon
  • 25 grams Chopped tomatoes
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Roasted coriander seeds
  • 1 tablespoon Chopped garlic
  • Salt to taste
  • 1 tablespoon Chopped fresh coriander leaves
