SMOKED MACKERELS

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Marinate mackerels with salt, lemon juice and slit green chillies in the stomach cavity.
  • Prepare a bed of hay and place the marinated mackerels in a single layer, Wrap with banana leaves. Cover with more hay on top.
  • Set the hay on fire, then put more hay on top and light the fire again.
  • Then turn the mackerels and put more hay on top and light the fire again till the fish is cooked.
  • Remove mackerel's burnt hay with tongs and remove the blackened skin.
  • Squeeze lime juice and sprinkle salt on the flesh of the fish and Serve hot.

INGREDIENTS

  • 9 Fresh mackerels, cleaned and rinsed
  • Rock salt  
  • 3 Green chillies
  • 2 tablespoons Lime juice
  • Hay (dry)
  • Banana leaves
