Preparation Method :

  • Grind together all the ingredients for the spice paste. Marinate the trotters in it and leave in a cool place for an hour.
  • In a heavy bottomed pan, heat the oil and gently cook the onions till they are transparent.
  • Add in the cinnamon sticks, black peppercorns and turmeric powder.
  • Add in the trotters and the marinade. Cook gently and stir to prevent the marinade from sticking to the bottom.
  • Add 2 cups of water and cook for 20-30 minutes or until the trotters are soft and done and the sauce is thickened. Adjust seasoning and serve hot.


  • 6 kg Pork trotters, cleaned, rinsed and pat dried
  • 125 grams onions, sliced
  • 2-3 Cinnamon sticks  
  • 1½ teaspoon Whole black peppercorns
  • 1 teaspoon Sugar
  • 1 teaspoon Turmeric powder
  • 50 ml Cooking oil

The Spice Paste:

  • 2 tablespoon Dried red chillies
  • 75 ml Malt vinegar
  • ½ teaspoon Roasted cumin seeds
  • 1 tablespoon Cleaned ginger
  • ¼ teaspoon Turmeric powder
  • 1 teaspoon Roasted black peppercorns
  • 1 tablespoon Peeled garlic
  • Salt to taste
