Preparation Method :

  • Beat the eggs and fish stock together and season with salt and pepper.
  • Divide the prawns among four small heatproof bowls. Pour egg and stock mixture over the prawns.
  • Put the bowls in a steamer and steam over simmering water in a covered wok for 10 - 12 minutes, until the custard to be set even in the centre. Make sure not to overcook.
  • Sprinkle the custard with the chopped spring onion and soy sauce.
  • Heat oil in a wok until very hot and pour little over each custard. Serve immediately.


  • 250 ml Fish stock
  • 1 tablespoon Light soy sauce    
  • 1 Spring onion, finely chopped
  • 500 grams Prawns, Roughly chopped
  • 1 tablespoon Cooking Oil
  • 4 Eggs
