Preparation Method :

  • Melt the ghee in a large non-stick saucepan. Add all whole spices, cashews and raisins Add onion and saute for 5 minutes.
  • Add chicken, mix well and fry for 5 minutes.
  • Add rice, salt, milk and enough water to cover everything by linch. Bring to boil. Lower the heat and simmer, covered, for 45 minutes. Chock rice and chicken are cooked. Turn off and leave to rest for 5 minutes.


  • 250 grams chicken, boneless, cut into small pieces
  • 500 grams basmati rice uncooked
  • 3 tablespoon ghee  
  • 2 onions medium size sliced          
  • 3 pieces cinnamon bark
  • 6 cloves         
  • 4 star anise flowers 
  • 4 bay leaves 
  • 6 black cardamoms  
  • 6 green cardamoms
  • 2 tablespoon cashew nuts
  • 1 tablespoon raisins
  • 6 black peppercorns, whole
  • 2 tablespoon milk
  • 2 teaspoon ginger paste
  • 2 teaspoon garlic paste
  • 2 green chilli, cut in two length ways
  • Salt to taste
