Preparation Method :

  • Mix all the batter ingredients together: Heat the oil
  • When oil is hot dip the aubergine slices in the batter and cook in oil. Serve with tomato sauce or mint chutney. Sprinkle some chat masala on the top.


  • 200 grams chickpea flour
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • Pinch of ajowan seeds
  • 1 teaspoon ground red chilli
  • 1 teaspoon ground turmeric
  • 1 teaspoon asafoetida
  • Pinch of salt
  • 500 grams aubergine thinly sliced
  • Peanut oil for deep frying
  • Chat masala to garnish
