Preparation Method :

  • Skin the tomatoes, puree and set aside.
  • Melt the butter in a saucepan; add peppercorns, flour and celery leaves.
  • Cook for 3 minutes.
  • Add stock and milk, mix well to make it smooth. Bring to boil and boil for 2 minutes.
  • Add pureed tomatoes, cream, white pepper and salt.
  • Cook tor l0 min on a low heat uncovered.
  • Stir regularly.
  • Strain before serving.
  • Serve with croutons and some fresh cream.


  • 750 grams fresh tomatoes
  • 500 ml vegetable stock
  • 25 grams plain flour
  • 25 grams butter
  • 2 teaspoon black peppercorns, whole
  • 200 ml milk
  • 5 sprigs celery leaves
  • 5 tablespoon fresh cream
  • 1 teaspoon ground white pepper
  • Salt to taste
