Preparation Method :

  • Heat the oil in a Balti pan, wok or large frying pan.
  • Add the onions and garlic and cook over a medium heat for 5 minutes.
  • Add the ginger and all the spices and cook, stirring, for a further 5 minutes.
  • Add the chicken and water, and stir fry for 15-20 minutes, until just tender.
  • Add the lemon juice, pineapple chunks and pineapple juice.
  • Simmer for 5 minutes, adding extra water if necessary.
  • Add the coriander and simmer for a further 2 minutes. Serve.


  • 1 kilograms boneless chicken, diced to about the same size as the pineapple cubes
  • 50 ml sesame oil
  • 4 large onions, sliced
  • 4 large cloves garlic, crushed
  • 2.5 cm fresh ginger, grated
  • 1 tablespoon Balti spice mix
  • Pinch of each of ground cloves, ground cinnamon, ground bay leaves and ground black pepper
  • 15 ml lemon juice
  • 200 grams pineapple chunks canned in natural juice, drained
  • 30 ml juice from can of pineapple
  • Fresh coriander, chopped
