This is a basic, easy-to-prepare chicken curry that can be dressed up with a wide assortment of accompaniments.
Serves :

Preparation Time :
15 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Brown the chicken in the oil. Add the onion and saute until soft.
  • Add the curry powder, cardamom, chilli powder and salt. Keep stirring constantly.
  • Add the stock and simmer until the meat is very tender, about 20 minutes.
  • Remove the chicken, reserving the liquid.
  • Slowly add cashewnut paste, bring to the boil and stir until the sauce has thickened.
  • Replace the chicken, and simmer over a low heat until heated through.
  • Serve hot with Rice or Roti with Raita.



  • 500 grams boneless Chicken, diced
  • 4 tablespoon IDHAYAM Sesame oil
  • 3 onions, chopped
  • 2 tablespoon Curry Powder
  • 5 green Cardamom, crushed
  • 500 ml chicken stock
  • 1 tablespoon cashewnut paste
  • 4 teaspoon red chilli powder
  • Salt to taste
