CHICKEN CURRY WITH SLICED APPLES

- Heat the oil in a karahi, wok or heavy pan and fry the onions with the bay leaf, cloves, cinnamon and peppercorns until the onions are begin to soften .
- Add the chicken pieces to the onions and continue to stir-fry for at least another 5 minutes.
- Lower the heat and add the ginger, garlic, garam masala, chilli powder, salt and ground almonds and cook, stir constantly.
- Pour in the yogurt and stir for a couple more minutes.
- Add the apples and chop coriander, cover and cook about 10 minutes.
- Check that the chicken is cooked through and serve immediately; garnished with the flaked almonds whole coriander leaves.

- 2 teaspoon Cooking oil
- 2 medium onions, diced
- 1 bay leaf
- 2 cloves
- 1 in cinnamon stick
- 4 black peppercorns
- 750 grams skinned and cut into 8 pieces
- 1 teaspoon garam masala
- 1 teaspoon grated fresh root ginger
- 1 teaspoon crushed garlic
- 1 teaspoon salt
- 1 teaspoon chilli powder
- 1 tablespoon ground almonds
- 150 ml natural (plain) low fat yogurt
- 2 green eating apples, peeled, cored and roughly sliced
- 1 tablespoon chopped fresh coriander (cilantro)
- 1 tablespoon flaked (sliced) almonds, lightly
- Toasted and fresh coriander (cilantro) leaves, to garnish
