CHICKEN MADRAS

35 minutes

Preparation Method :

  • Mix the tomato puree in a bowl with the fenugreek, fennel, ginger, ground coriander, garlic, chilli powder, turmeric, lemon juice, salt and water.
  • Heat the oil in a wok or large pan and fry the onions with the curry leaves until the onions are golden. Add in the chicken and stir for a minute.
  • Stir in the tomato sauce and spice mixture until the ingredients are well mixed.
  • Simmer to low flame and cook for about 10 minutes, then add in the chillies. Garnish with fresh coriander and serve.

INGREDIENTS

  • 500 grams chicken breast fillets, skinned, cut into cubes
  • 3 tablespoon tomato puree 
  • Pinch ground fenugreek 
  • ½ teaspoon ground fennel seeds
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon ground coriander 
  • 1 teaspoon crushed garlic 
  • 1½ teaspoon chilli powder
  • ¼ teaspoon ground turmeric 
  • 2 tablespoon lemon juice 
  • 1 teaspoon salt
  • 250 ml water 
  • 50 ml IDHAYAM sesame oil 
  • 2 onions, diced 
  • Few curry leaves 
  • 2 fresh green chillies, seeded and chopped
  • Coriander sprigs to garnish 
  • Naan bread, to serve
