CHICKEN WITH GREEN MANGO

Preparation Method :
- Add the onion seeds, ginger, garlic, chilli powder, turmeric, salt and ground coriander with the cubed chicken and half of the sliced mango in a large bowl.
- Heat the oil in a wok or large pan over a medium heat and fry the sliced onions until golden brown. Add the curry leaves to the pan and stir very gently to release their flavour.
- Add in the chicken and the sliced mango mixture into the pan, stirring. Stir-fry over a medium heat until the chicken is opaque.
- Pour in the water and cook for about 10 minutes or until the chicken is cooked and the water has been completely absorbed.
- Add the remaining mango slices, the tomatoes, green chillies and fresh coriander. Serve with the plain boiled rice.
INGREDIENTS
- 500 grams chicken breast fillets, skinned and cubed
- 100 grams tomatoes, quartered
- ½ teaspoon onion seeds
- 1 teaspoon grated fresh root ginger
- 100 grams onions, sliced
- 1 green unripe mango, peeled, pitted and sliced.
- 1 teaspoon crushed garlic
- 1½ teaspoon chilli powder
- ½ teaspoon ground turmeric
- 250 ml water
- 1 teaspoon ground coriander
- 2 tablespoon Cooking oil
- 3 fresh green chillies, chopped
- Few curry leaves
- Salt, to taste
- 25 grams chopped fresh coriander
