Preparation Method :

  • Break the eggs into a bowl and season with salt and pepper.
  • Coat the chicken fillets with the garam masala, then brush with the beaten egg.
  • In a large pan, heat the ghee or vegetable oil and fry the chicken until cooked through and browned on both sides. Remove from the pan and keep warm.
  • In the same pan, fry the chopped onion, ginger, garlic, cloves, cardamom pods, cinnamon and bay leaves.
  • When the onion turns golden, remove the pan from the heat, allow the contents to cool and add saffron and yogurt mixture ,Stir well to prevent from curdling.
  • Return the chicken to the pan, along with any juices and gently cook until the chicken is tender. Adjust the seasoning.
  • Just before serving, pour in the cream. Fold it in then repeat process with the ground almonds; Make sure the curry is piping hot before serving.


  • 1 large onion
  • 2 eggs
  • 4 chicken breast fillets
  • 2 tablespoon garam masala
  • 6 tablespoon Cooking oil
  • 5cm piece fresh root ginger, finely crushed
  • 4 garlic cloves, finely crushed
  • 4 cloves
  • 4 green cardamom pods
  • 5cm piece cinnamon stick
  • 3 bay leaves
  • 12-15 saffron threads
  • 150 ml natural (plain) yogurt
  • 1 teaspoon corn flour
  • 5 tablespoon double (heavy) cream
  • 50 grams ground almonds
  • Salt and pepper
