RED HOT CHICKEN CURRY

Preparation Method :

  • Dice the onions, Seed the peppers and cut them into chunks.
  • In a medium heavy pan, heat the oil and fry the fenugreek and onion seeds until they turn a shade darker.
  • Add the chopped onions, garlic and ginger, fry for about 3-5 minutes until the onions turn golden brown. Reduce the heat to very low.
  • In a bowl, mix together the ground coriander, chilli powder, salt, canned tomatoes and lemon juice. Stir well.
  • Pour this mixture into the pan and Stir- fry for about 3 minutes.
  • Add the chicken cubes and stir fry for 5 minutes.
  • Add the chopped fresh coriander, green chilies , red and green pepper chunks.
  • Lower the heat, cover the saucepan, simmer for about 10 minutes until the chicken cubes are cooked.
  • Serve the curry hot, garnish with fresh coriander.

INGREDIENTS

  • 2 medium onions
  • ½ red (bell) pepper
  • ½ green (bell) pepper
  • 40 ml IDHAYAM sesame oil
  • ½ teaspoon fenugreek seeds
  • ¼ teaspoon onion seeds
  • ½ teaspoon crushed garlic
  • ½ teaspoon grated fresh root ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 420 grams tomatoes
  • 2 tablespoon lemon juice
  • 350 grams chicken, skinned and cubed
  • 2 tablespoon chopped fresh coriander (cilantro)
  • 4 fresh green chilies, chopped
  • Salt to taste
  • Fresh coriander (cilantro), to garnish
