RED HOT CHICKEN CURRY

Preparation Method :

Dice the onions, Seed the peppers and cut them into chunks.
In a medium heavy pan, heat the oil and fry the fenugreek and onion seeds until they turn a shade darker.
Add the chopped onions, garlic and ginger, fry for about 3-5 minutes until the onions turn golden brown. Reduce the heat to very low.
In a bowl, mix together the ground coriander, chilli powder, salt, canned tomatoes and lemon juice. Stir well.
Pour this mixture into the pan and Stir- fry for about 3 minutes.
Add the chicken cubes and stir fry for 5 minutes.
Add the chopped fresh coriander, green chilies , red and green pepper chunks.
Lower the heat, cover the saucepan, simmer for about 10 minutes until the chicken cubes are cooked.
Serve the curry hot, garnish with fresh coriander.

INGREDIENTS

2 medium onions
½ red (bell) pepper
½ green (bell) pepper
40 ml IDHAYAM sesame oil
½ teaspoon fenugreek seeds
¼ teaspoon onion seeds
½ teaspoon crushed garlic
½ teaspoon grated fresh root ginger
1 teaspoon ground coriander
1 teaspoon chili powder
420 grams tomatoes
2 tablespoon lemon juice
350 grams chicken, skinned and cubed
2 tablespoon chopped fresh coriander (cilantro)
4 fresh green chilies, chopped
Salt to taste
Fresh coriander (cilantro), to garnish
