Preparation Method :

  • Skin the chicken breast portions and remove any visible fat. Cut the meat into small cubes.
  • Heat the oil in a heavy pan and fry the cumin seeds until they splutter. Add the onion, peppers, garlic and ginger and fry for 5 minutes.
  • Add the curry paste and fry for about 2-3 minutes. Stir in the chilli powder, ground coriander, cumin and salt and add 1 tablespoon of water; fry for a further 1 minute.
  • Add the chicken cubes and fry tor about 5-7 minutes. Add the canned tomatoes and chopped fresh coriander.
  • Cover the pan tightly with a lid and cook for about 10-12 minutes or until the chicken cubes are tender. Garnish with sprigs of fresh coriander and serve hot .


  • 750 grams chicken breast portions
  • 1 tablespoon Cooking oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 green (bell) pepper, seeded and finely chopped
  • 1 red (bell) pepper, seeded and finely chopped
  • 1 garlic clove, crushed
  • 3 cm  fresh root ginger, finely chopped
  • 1 tablespoon curry paste
  • ½  teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 500 grams chopped tomatoes
  • 50 grams chopped fresh coriander cilantro, plus extra to garnish
