Preparation Method :

  • Heat the oil in a Balti pan, wok or large frying pan over a medium heat.
  • Add the onion and garlic and cook for about 10 minutes until softened and beginning to brown.
  • Mix the garam masala with the remaining ghee (melted) or oil and enough water to make a stiff paste.
  • Add the green chilli, garam masala paste and fish to the pan and gently stir fry for 5-10 minutes.
  • Gradually add the milk, stirring carefully, and simmer over a low heat for a further 10 minutes.
  • Serve sprinkled with a little garam masala. 


  • 1 kilograms fish fillets or steaks
  • 50 ml Sesame oil
  • 4 small onions, finely chopped
  • 5 cloves garlic, crushed
  • 2 green chillies, finely chopped
  • 2 tablespoon Balti garam masala
  • 200 ml milk
  • 2 tablespoon fresh coriander, finely chopped
  • Pinch of Balti garam masala
