SHRIMP VINDALOO

Vindaloo describes a style of cooking whereby the main ingredient (Seafood, chicken or lamb) is marinated for 12 hours in a vinegar-based sauce with chilli and other spices. The marinated meat is then cooked in the marinated.

Cooking Time :
20 minutes

Preparation Method :

  • Combine the chilli, ginger, onion, garlic, cumin, turmeric, oil and vinegar and puree in a blender until smooth.   
  • Place this sauce in a glass or ceramic bowel, add the raw shrimps and toss until well coated.
  • Cover and marinate in the refrigerator for overnight.
  • Saute the seafood and the marinade in the butter until cooked through.

 

INGREDIENTS

  • 3 dried hot red chilli
  • 3 teaspoon chopped fresh ginger
  • 1 medium onion, chopped
  • 4 cloves garlic, chopped
  • 1 teaspoon ground cumin
  • 2 teaspoon turmeric
  • 2 tablespoons IDHAYAM Sesame oil
  • 6 teaspoon cider vinegar
  • 500 grams large shrimps
  • 50 grams butter
