CARNIVAL CHICKEN WITH SWEET POTATO MASH

Preparation Method :

  • Put the chicken breasts into a non-metallic dish.
  • Mix together all the ingredients for the marinade in a measuring jug then pour the marinade over the chicken, making sure all the pieces are well coated.
  • Cover and leave to marinate in the refrigerator overnight.
  • When you are ready to cook, arrange the chicken breasts on a grill pan and cook them under a preheated moderate grill for about 10 minutes on each side.
  • Meanwhile, boil the sweet potatoes in their skins for 20 minutes until soft.
  • Drain well then peel. Mash the potatoes well and let them dry a bit, then stir in the fromage frais and season with salt and pepper.
  • Slice the chicken breasts and serve with the mash.
  • Garnished with the flat leaf parsley. 

INGREDIENTS

  • 6 boneless, skinless chicken breasts 
  • Flat leaf parsley sprigs, to garnish

Marinade

  • 200 ml sweet sherry
  • 2 teaspoon Angostura bitters
  • 2 tablespoons light soy sauce
  • 2 tablespoons chopped fresh root ginger
  • Pinch of ground cumin
  • Pinch of ground coriander
  • 2teaspoon dried mixed herbs
  • 2 small onions, finely chopped
  • 100 ml Chicken Stock

Sweet Potato Mash

  • 4 sweet potatoes
  • 4 tablespoons fromage frais 
  • Salt and pepper
