Preparation Method :

  • In a large mixing bowl, mix the lemon juice, ginger, garlic, crushed dried red chilies, salt, sugar and honey.
  • Transfer the cleaned chicken thighs to the spice mixture and coat well. Cover and set aside for about 30 minutes.
  • Preheat the grill (broiler) to medium. Add the fresh coriander and chopped chilli to the chicken and place them in a flameproof dish.
  • Pour any remaining marinade over the chicken and brush with the oil.
  • Grill (broil) the chicken thighs for 10 -12 minutes, turn and baste with the marinade occasionally, until cooked through and browned.
  • Serve cold, garnished with fresh coriander and accompanied yellow rice and salad.


  • 12 chicken thighs, skinned
  • 6 tablespoon lemon juice
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon crushed garlic
  • 1 teaspoon crushed dried red chilies
  • 1 teaspoon salt
  • 1 teaspoon soft brown sugar
  • 2 tablespoon clear honey
  • 2 tablespoon chopped fresh coriander (cilantro)
  • 1 fresh green chili, finely chopped
  • 2 tablespoon IDHAYAM sesame oil
  • Fresh coriander (cilantro), to garnish
  • Yellow rice and salad, to serve
