Preparation Method :
- In a large mixing bowl, mix the lemon juice, ginger, garlic, crushed dried red chilies, salt, sugar and honey.
- Transfer the cleaned chicken thighs to the spice mixture and coat well. Cover and set aside for about 30 minutes.
- Preheat the grill (broiler) to medium. Add the fresh coriander and chopped chilli to the chicken and place them in a flameproof dish.
- Pour any remaining marinade over the chicken and brush with the oil.
- Grill (broil) the chicken thighs for 10 -12 minutes, turn and baste with the marinade occasionally, until cooked through and browned.
- Serve cold, garnished with fresh coriander and accompanied yellow rice and salad.

- 12 chicken thighs, skinned
- 6 tablespoon lemon juice
- 1 teaspoon grated fresh root ginger
- 1 teaspoon crushed garlic
- 1 teaspoon crushed dried red chilies
- 1 teaspoon salt
- 1 teaspoon soft brown sugar
- 2 tablespoon clear honey
- 2 tablespoon chopped fresh coriander (cilantro)
- 1 fresh green chili, finely chopped
- 2 tablespoon IDHAYAM sesame oil
- Fresh coriander (cilantro), to garnish
- Yellow rice and salad, to serve
