AUBERGINE PICKLE

Makes :
750 Grams

Preparation Time :
20 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Place the cubed aubergine in a colander, sprinkle over the salt and set aside for half an hour.
  • Heat the oil in a large, heavy-based frying pan, add the turmeric, cumin, ground coriander, split mustard seeds and chilli powder, fry for about 2-3 minutes or until fragrant.
  • Add the ginger, garlic and chillies stir well. Simmer for 3-5 minutes, stirring occasionally.
  • Add the drained aubergine cubes and the sugar to the pan. Mix well and cook over a moderate heat, stirring occasionally.
  • Cook for about 20-25 minutes or until the aubergine is very soft and all the flavours are well combined.
  • Ladle the aubergine pickle into sterilized jars.

INGREDIENTS

  • 350 grams aubergine, cut into small cubes
  • 100 ml IDHAYAM sesame oil
  • ½ teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon split mustard seeds
  • 2 inch piece fresh root ginger, grated
  • 4-5 garlic cloves, crushed
  • 3-4 red chillies, deseeded and thinly sliced
  • 3-4 green chillies, deseeded and thinly sliced
  • 90 grams soft brown sugar
  • Chilli powder and salt, to taste
