Makes :
2 Cups

Preparation Method :

  • Soak the fenugreek seeds in water and grind to a fine paste.
  • Mix the curd with the salt and the fenugreek paste in a large bowl.
  • Soak the slit green chillies in the curd mixture atleast for 3 days.
  • Shake the bowl every day.
  • After 3 days remove the green chillies, place them on a tray and dry in the sun for the entire day. In the evening resoak the partly dried chillies in the curd mixture.
  • Continue this process every day till all the curd mixture is completely absorbed.
  • Dry the green chillies till they turn cream in colour.
  • Store in an airtight container and use when required. Fry in oil till black in colour.


  • 2 tablespoon fenugreek seeds
  • 1.5 litres curd
  • 250 grams Salt, or to taste
  • 750 grams green chillies, slit lengthwise without removing the stalk
