Preparation Method :

  • Mix the mustard seeds, cumin, turmeric, crushed garlic, vinegar, sugar and salt in a glass bowl. Cover and allow to stand for a day.
  • Heat the mustard oil and gently fry the spice mixture for about 5 minutes. Add the whole garlic cloves and fry for a further 2-3 minutes.
  • Add the halved fresh chillies and cook gently for about 20 minutes on low flame or until tender but still green in colour.
  • Transfer into the sterilized jar. Leave to rest for 1 week before serving.


  • 750 grams small fresh green chillies, halved
  • 45 grams crushed garlic 
  • 150 ml mustard oil
  • 145 ml white vinegar
  • 50 grams mustard seeds, crushed
  • 75 grams granulated sugar
  • 15-20 small garlic cloves
  • 50 grams freshly ground cumin seeds 
  • 2 teaspoon ground turmeric 
  • Salt, to taste
