Preparation Method :

  • Heat the oil in a large pan and fry the onion until it starts to soften.
  • Add the rice to the pan and fry for about 10-12 minutes, stir constantly, Finally add the crushed garlic.
  • Pour in the stock and stir well. Bring to the boil, Cover and simmer for at least 10 minutes.
  • Sprinkle the corn over the rice, spread the chopped pepper on top and sprinkle over the grated carrot. Cover tightly and cook until the rice is tender.
  • Transfer on to a serving plate and garnish with coriander sprigs.


  • 350 grams basmati rice , soaked for 20 mins 
  • 45 ml IDHAYAM sesame oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed 
  • 750 ml vegetable stock 
  • 125 grams fresh or drained canned corn 
  • 1 red or green pepper, seeded and chopped 
  • 1 large carrot, grated 
  • Fresh coriander sprigs, to garnish
