Preparation Method :

  • In a large pan, heat the oil over medium heat. When hot, sprinkle the granulated sugar over the surface and wait until it has caramelized.
  • Add the spices and bay leaf. Let sizzle for 10 seconds, then add the rice and salt. Fry gently, for at least a minute.
  • Pour in the water and bring to the boil. Reduce the heat to very low. Cover the pan and cook for 8-10 minutes.
  • Remove the rice from the heat and let it stand for some time. Gently fluff up the rice and transfer to a warmed dish to serve.


  • 250 grams basmati rice, soaked 
  • 50 ml Cooking oil
  • 4 teaspoon granulated sugar 
  • 5 green cardamom pods, bruised
  • 1 in piece cinnamon stick
  • 500 ml Hot water 
  • 4 cloves
  • 1 crumpled bay leaf
  • Salt to taste
