SUBZEE KI KHICHRI

Preparation Method :

  • Wash and drain the rice and lentils, Prepare all the vegetables and Set aside.
  • Heat the ghee or butter in a heavy-based saucepan and fry the onions along with the onion seeds, fresh coriander and green chillies for about 2 minutes.
  • Add in all the vegetables, lentils, salt and all the spices. Fry these over a medium heat for a further minute.
  • Add the rice and fry for further 20 seconds. Add the water, cover the pan with a tight-fitting lid and lower the heat.
  • Cook for 20 minutes or until the rice and lentils are cooked.
  • Let it stand for about 5 minutes and serve hot with a raita.

INGREDIENTS

  • 30 grams  diced carrots
  • 30 grams  frozen peas
  • 30 grams  sweetcorn
  • 30 grams  diced red pepper
  • 500 grams  basmati rice
  • 60 grams masoor dhaal
  • ½ teaspoon diced and crushed ginger root
  • ½ teaspoon crushed garlic
  • 120 grams  ghee or unsalted butter
  • 1 medium onion, peeled and sliced
  • ¼ teaspoon onion seeds
  • 1 tablespoon chopped fresh coriander
  • 2 green chillies, chopped and deseeded
  • ¼ teaspoon turmeric
  • 1½ teaspoons salt
  • 700 ml water
