Preparation Method :

  • Combine celery, turkey, parsley, spring onion, cranberries, yoghurt, and mayonnaise in a bowl and mix well. Season with salt and pepper.
  • Mix again and let stand at room temperature for 30 minutes or refrigerate for up to 3 hours for flavours to mingle.
  • To serve, place a lettuce leaf on each of 4 chilled salad plates and arrange the salad on each leaf.


  • 500 grams finely chopped celery
  • 500 grams coarsely chopped cooked turkey
  • 25 grams finely chopped fresh flat-leaf parsley
  • 2 spring onion, finely chopped
  • 2 Tablespoon dried cranberries
  • 100 grams natural low-fat yoghurt
  • 4 Tablespoon mayonnaise
  • 6 large leaves butter lettuce
