Preparation Method :

  • First make the dressing. Put all the ingredients into a screw top jar and shake vigorously until well combined.
  • Tear the lettuce into bite-sized pieces and place them in a large salad bowl with the mixed herb sprigs. Toss together lightly.
  • Add all the remaining ingredients, except the dressing, and salt and pepper to taste.
  • Just before serving, spoon over the dressing and toss lightly.



  • 2 small lettuce, separated into leaves
  • 50 grams mixed herb sprigs
  • 1 cucumber, thinly sliced
  • 50 grams walnut pieces
  • 500 grams cooked chicken, diced
  • 200 grams smoked ham, cut into strips
  • 150 grams cheese, crumbled
  • Seedless grapes, halved (optional)
  • Salt and pepper

French dressing

  • 4 tablespoons red or white wine vinegar
  • 4 garlic cloves, crushed 
  • 4 teaspoons Dijon mustard 
  • 1 teaspoon caster sugar 
  • 10 tablespoons olive oil 
  • Salt and pepper
