Preparation Method :

  • To make the dressing, put all the ingredients into a small bowl and beat with a wooden spoon until smooth.
  • Put the chicken pieces into a large bowl. Using a small sharp knife, peel the grapefruit and oranges, taking care to remove all the pith.
  • Working over a bowl to catch the juices, segment the flesh, set the juice aside.
  • Add the citrus fruit to the chicken with the cucumber and fennel. Toss lightly to combine.
  • Divide the salad leaves between four individual plates and arrange the chicken mixture on top.
  • To serve, stir the reserved citrus juices and the pink peppercorns, if using, into the dressing.
  • Pour over the salad.


  • 500 grams boneless, skinless smoked chicken, cut into chunks
  • 2 pink grapefruit
  • 4 small oranges
  • 1 cucumber, thinly sliced
  • 2 small fennel bulb, trimmed and thinly sliced (optional)
  • 100 grams frise
  • 100 grams lamb's lettuce or watercress
  • Pink peppercorns (optional)
  • Salt and pepper

Yogurt Dressing

  • 300 ml plain yogurt 
  • 2 tablespoon lemon juice 
  • 2 teaspoon clear honey 
  • 1 teaspoon Dijon mustard 
  • Salt and pepper
