CHICKEN SALAD WITH ARUGULA & WHITE BEANS

Preparation Method :

  • Preheat a grill pan or barbecue on high. Whisk the lemon juice, garlic, chopped cilantro, sugar, and oil in a small bowl. Season with salt and pepper.
  • Grill the chicken until cooked through,10 minutes on each side. During cooking, turn the chicken and baste with half the lemon and oil mixture.
  • Toss the beans, arugula, and remaining lemon and oil mixture in a bowl. Add the chicken and toss gently. Serve warm.

INGREDIENTS

  • 100 ml freshly squeezed lemon juice
  • 5 cloves garlic, finely chopped
  • 4 tablespoons chopped fresh cilantro
  • 2 tablespoon brown sugar
  • 150 ml sesame oil
  • Salt and freshly ground black pepper
  • 3 boneless skinless chicken breasts, sliced
  • 500 grams white kidney or cannellini beans, drained
  • 200 grams baby arugula (rocket) leaves
